Arroz Caldo is a famous rice porridge in the Philippines. Pieces of chicken is sautéed in garlic and ginger and is then simmered in water. As the water boils, long grain rice is then added and boiled until it becomes thick in consistency. It is then garnished with minced spring onions. Arroz caldo is best served on rainy days, seasoned in fish sauce and ground black pepper. It can be paired with appetizers such as Tokwa’t Baboy.
