Bistek is the Filipino adaptation of the Mexican food “bistec”, in which the name can be a corruption of the English term “beef steak.” The dish uses beef strips that are flattened and tenderized. While the Mexican variant is cooked fried with bread crumbs and served in taco shells, the Filipino variant, also known as “bistek Tagalog”, is served as a main course with rice. The beef strips are sautéed in onions and then simmered in soy sauce and calamansi juice. The sweet taste of fried onions and the zest of calamansi makes it a good family dinner treat.
