Chopsuey is a Chinese vegetable stir-fry dish that has become a favorite among Filipinos. The colorful variety of vegetables being cooked in a tasty starchy sauce makes it the perfect dish for any celebration. In the local adaptation, the usual mix of carrots, cauliflower, broccoli, snow peas, baby corn, pork and shrimp may be combined with locally available ingredients like chayote. It can then be garnished with hard-boiled quail eggs.
